Classic Hot Chocolate

Ingredients (four cups)
3 cups milk
1 cup heavy cream
1/2 cup sugar – adjust to taste
1/4 cup unsweetened cocoa powder
A pinch of salt
1 teaspoon pure vanilla extract
Marshmallow or whipped cream for garnish

Procedure
In a heavy-bottom saucepan, combine milk, heavy cream, sugar, and cocoa powder, and add a pinch of salt. Over medium-low heat, stir the mixture gently with a whisk until the cocoa and sugar completely melt and the mixture is smooth and well-blended. Do not let the mixture boil. Remove from the heat and add the vanilla extract. Pour the hot chocolate into mugs and top it with marshmallows or whipped cream or both, if you like.
